Why don’t you do deviled eggs and garnish with caviar? Also, tiny little steamed potatoes, cut in half and a dollop of creme fraiche and caviar ganish. Otherwise, you can serve the caviar on ice with a tiny spoon, surrounded by sliced cocktail rye bread and little bowls with the garnishes like chopped onion and chopped egg and creme fraiche or sour cream. It doesn’t get much easier.

CAVIAR AND CREAM CHEESE

1 (8 oz.) pkg. cream cheese
6-7 eggs, boiled and made into egg salad (no salt)
1 med. onion, chopped
2-3 tbsp. sour cream
1 sm. jar of caviar (use black caviar only)

Lightly grease spring-form pan. Make egg salad (best with regular mayonnaise) and spread on bottom of spring-form pan. Next, layer onions over egg salad. Mix room temperature cream cheese with one or two tablespoons of sour cream to an icing consistency. Then spread this carefully as the next layer (this takes time and patience!) Refrigerate overnight. Just before serving, spread caviar over the top before you spring the pan. Serve with crackers. Makes a beautiful presentation!

CAVIAR BALL

8 oz. cream cheese
1 tbsp. mayonnaise
1 tsp. onion bouillon crystals
2 tbsp. diced black olives
1/2 tsp. Worcestershire sauce
Diced onion to taste
1 sm. jar black or red caviar

Soften cream cheese. Mix cream cheese with mayonnaise, onion, black olives and Worcestershire. Dissolve bouillon crystals in 1 teaspoon hot water. Add to cream cheese mixture. Form into ball and refrigerate.
Just before serving, pat on caviar gently. Serve with Melba rounds.

ooh lala caviar. I would make blinis (flour, water, yeast) and sour cream topped with caviar. That would be super cheap, and its a classical caviar recipe.
