These can be sliced into bite size pieces, as the egg rolls are large.
THAI SPRING ROLLS
1 large chicken breast, boneless, skinless.
1 small head cabbage
6 carrots
Egg roll wrappers
2 cloves garlic, minced
Soy sauce
oil for frying
Salt and pepper
1 beaten egg
Dice the chicken breast. Shred cabbage and carrots.
Heat oil in large skillet, add minced garlic and few Tbsp. soy sauce plus salt and pepper. Stir-fry chicken approximately 10 mins. or until brown.
Stir-fry cabbage and carrots for a few mins. in same pan. Remove vegetables to paper towels to drain.
Combine chicken with vegetables and wrap in egg roll wrappers. Use a beaten egg to to stick edges together. Deep fry in hot oil until golden brown.
Thai Curried popcorn nibbles recipe
Recipe ingredients
* 6 teaspoons vegetable oil
* 1 cup popping corn
* 1/4 cup butter or margarine
* 2 teaspoons curry powder
* 1 teaspoon salt
* 1, 12 ounces, can mixed nuts
How to make curried popcorn nibbles
* Pour half the oil and 1/2 cup of the corn in heavy skillet with tight lid and shake until popping stops.
* Repeat with other half of oil and remaining 1/2 cup popping corn.
* Heat butter with curry powder and salt in small saucepan until butter bubbles, but not brown.
* Add nuts to popped corn, drizzle curry mixture over and toss corn until well coated.

Thai Peanut Butter Chicken Wraps Recipe
* 4 Servings * Ready In Time 10 minutes
Ingredients
* 1/2 cup Jif® Creamy Peanut Butter or Jif® Extra Crunchy Peanut Butter
* 1/2 cup pad thai sauce
* 1/2 cup chopped green onion
* 4 burrito size tortillas
* 1 (6 oz.) pkg. fully cooked grilled chicken breast strips, cut into bite-size pieces or 1 1/3 cups cooked chicken
* 2 cups shredded lettuce
Directions
* Stir together peanut butter, pad thai sauce and green onions in a medium bowl until combined.
* Place tortilla on microwave-safe plate. Spread 1/4 of peanut butter mixture on tortilla to about 1/2-inch of edge. Microwave on HIGH (100% power) for 20 seconds.
* Layer chicken, then lettuce on top. Wrap burrito style: Fold one edge of tortilla up about 1-inch over filling. Fold right and left sides over folded edge. Roll up ending with loose edge on bottom. Cut in half diagonally.
* Repeat with remaining tortillas. Yield: 4 wraps.
TIP To make one wrap: Use 2 tablespoons peanut butter, 2 tablespoons pad thai sauce, 2 tablespoons chopped green onion, 1/3 cup chicken and 1/2 cup lettuce on 1 burrito.
